Organizations (non-profit groups, governments, etc) basically care for the animals. Reserves are often set up by the government to protect animals from poachers. Park guards and sometimes the military patrol these areas. Non-profits send money to fund these expensive parks/reserves and volunteers may travel to countries to raise awareness of this problem
Most animals that are endangered simply need humans to stop destroying their habitat, poisoning them with pollutants, or hunting them. However, some are in such bad shape that conservation efforts such as captive breeding programs are necessary to create a viable population that can be returned to the wild. In other cases, we need to actually repair some of the habitat we've already destroyed, because what is left is not enough to sustain a healthy population.
