If it means "Why did he open a restaurant", he had been making chicken at a gas station in the 1930's, and as the chicken became more popular he branched out of the gas station to start his own restaurant. The success of his restaurant even got him the honorary title of Colonel from the governor of Kentucky in 1936.
If it means "why fry the chicken", it was an issue of speed. Originally his chicken was made in a standard iron skillet which took about 30 minutes. Then in 1939, as the business expanded, he swapped over to a pressure fryer.
