The Sumerians built canals, because the Tigress river kept on flooding the crops during harvest time. During the flood, the Sumerians opened the "gates" to let the water flow into the canals. The canals don't only save the crops from flood, but they also water the crops
so that they could get to places they want faster and more eficiantly
