Zuko asked his father where his mother was in the last episode because he doesn't believe that his mother is dead and that his father is hiding something about her. Zuko's mother used to care about him more then Azula and she just vanished over night without saying bye or anything. Also he hasn't seen his mother since he was a little boy, and wanted to the truth and now feels confident to ask his father now that he is Emperor.

What happend to zuko's mother in Avatar the Last Airbender?

I know right!!! It never actually tells you which is really sad but at the same time it's nice to have some mystery left. In the last episode, Sozin's Comet, at the very end you see Zuko asking his father but it doesn't actually tell you, I guess Zuko never finds out either. Zuko became Fire Lord so he had the power. He was very strong-willed and would find out before the final scene.
