In all early societies the fabrics used depended on what raw materials were available. For wool garments, huge amounts of sheep would be required and sheep depend on vast areas of grazing land, which Egypt did not have.

The flax plant (hieroglyphs mHy) grew in abundance throughout Egypt, producing not only linen fibres for cloth but also linseed oil.

So there was little choice involved, it was simply a matter of using what was available.
