Tanks were introduced during the war. So the Cavalry and most Scouts and Messengers rode the horses...

Horses were mainly used as draft animals. Calvary were basically useless because of trench warfare, so horses delivered supplies to the front.

Short answer: Everyone. All participants used horses in WW1 to some extent. While WW1 proved the obsolescence of horse calvary in the face of trenches and machine guns, each side maintained calvary forces to exploint a break through that never materialzed on the western front. (Horse Calvary had somewhat more success on the eastern front) The most universal use of horses whas in towing artillery and for logistics. At the time neither the internal combustion engine nor the existing road infrastructure were mature enough to be fully relied upon, especially in muddy conditions. British and American forces were perhaps more mechanized than most but neither was able to fully eliminate equine support units. Some historians have argued that Germany was forced to surrender not because it was running out of men for the army but rather that it was running out of horses to support them.

Sadly, many were killed in battles. Some when galloping over trenches/craters left by bombs... broke their legs, ankles, hips, and spine which means and still means today that they must be put down. Although, many horses did survive and were spread out on a number of farms across the United States and Europe.

Horses are strong and could move supplies faster and more efficiently than people on foot. They where also used in the cavalry.
