They knew they would not be able to get on a lifeboat, and also that they were more than likely to drown or die in some fashion. They decided to keep playing in order to calm other passengers who might meet the same fate (which may have helped more people get into lifeboats safely) and prevent them from panicking.

I don't think anyone was singing - there was however a band playing: The Band was asked to play some music to keep the passengers calm and they did. Theu played up until the very end and not one of them serviced the disaster.
That would be Wallace Hartley. He and the rest of the band perished in the sinking.
