They did, at least the smart ones got out while the getting was good. The eruption was not a sudden unexpected event. There had been warning signs for weeks before the big blast. The ones that remained were the ones who for some reason could not leave or they were simply the type of people who ignored good advise. Proof of the evacuation of the majority of people is in the comparatively low number of bodies found for a town of Pompeii's size.

They really didn't understand what was happening. No one knew they lived under a volcano and by the time it began it the final eruption it was too late. They had seconds to live and no matter where they could have gone or hidden they had no chance. The eruption covered 65 acres and 3 cities. It changed the coastline and completely covered everything with a pyro clastic cloud in less than 7 minutes. People literally died where they were. Some died by breathing in the dust and it turned to cement in their lungs. The air was so hot that their brains boiled. Historians have bone fragments that are black from the 900 degree heat. Today the volcano is still active with a million plus people living near it and if it erupts again as it did in 79 thousands will die.

They didn’t realize what was happening. Many thought if they hid in rooms that they could escape, but they didn’t count on the poison gases and heat. Historians have found one group of people hiding in a Herculaneum boat house. These people died from the extreme heat of over 900 degrees.
