Because at a microscopic level, the shell of Mentos is very uneven, and the carbonated bubbles in the soda are immediately attracted to them. Mentos have a lot of tiny holes on them (think of the moon's surface), and Diet Coke is carbonated. When you drop the mentos in, the carbon dioxide in the soda comes out into the tiny holes on the mentos, and it happens very fast. The bubbles float to the top very fast. The aspritame and caffiene increase the effects, thus having the bubbles rocket out so fast that the some of the soda is dragged along, thus creating the large fountain of soda.

This is not a chemical reaction. The carbon dioxide bubbles in soda gather on the rough surface of the Mentos much like bubbles gather on your skin when you take a bath or go swimming. These bubbles then rise to the top. However, this happens very rapidly and on a large scale.

when the mentos hits the surface of the coke, the compressed carbon dioxide forms bubble on the surface of the mentos. and it is released into the air and pushes the coke out with it.
