They have mirrors in order to be able to see around them. The ambulance is a large emergency vehicle. It is often necessary that the proceed to the emergency room of the nearest hospital as quickly as they can in a safe manner. The mirrors allow them to merge in traffic and navigate through tight areas in order to get to a patient or to get the patient to the hospital.
So that it can be seen by drivers looking in their side or rear view mirrors.
The word is written in reverse on the front of ambulances. The reason for this is that any vehicle ahead of the ambulance and travelling the same way can see the word correctly from their on board mirrors.
