Because astronomers are human, and because humans have an insatiable mania for classifying things to make it easier to see similarities and differences between them.

We humans are excellent at seeing patterns, and seeing how the patterns relate to other patterns. Even when there are no real patterns; for example, the arrangement of stars in the sky into "constellations:" shaped like heroes, gods and animals.

When it comes to individual stars, it makes some sense to classify them based on size, temperature, and color; that makes it easy to describe a star in relationship to other stars that are at least vaguely similar. So a "Type G" star is similar in size and brilliance to our Sun.
