However, like most traditions, there's an underlying reason for it. The hole probably originated as a way to make sure the donut got thoroughly cooked; frying a ball of dough tends to either overcook the outer layers or leave the middle raw. Poking a hole through the middle allowed the hot oil to pass through the center of the donut, cooking it more evenly.
Not all donuts have holes in the middle. But for those that do, it is possible they have them so that they can be easier pulled from a pot or vat; one story by a claimant to their supposed inventor is that the middles were always raw, and he did not like that part, so he would punch them out with a piece of metal.
They have holes because if they didn't they would basically be bread.
Oxygen. Bread starts out as dough and as it rises oxygen builds up. But if it didnt, then your bread would always be flat!!
