Because it's a powder and it's used in guns. (Gunpowder in the cartridge case is ignited by the primer when the firing pin strikes the primer. When the powder burns, a large volume of gas is generated in the confined space. This gas pressure pushes the bullet out the case and down the barrel with a bang.)

Fireworks were invented in China for New Year celebrations. They were exploded at the commencement of the new year to scare away evil spirits. It is said that a cook acidently spilled a mixture of black powder and sulfur salts in a cooking fire and it created blue flames. When the mixture was lit in a bamboo shoot it exploded.

Since it was well over 1000 years ago, we have to guess. The first discovery may have been accidental. Then they found it could be used in fireworks, and in warfare in crude grenades and cannon.
