Because leafs are full of chlorophyll, which is used for photosynthesis. If the leafs are in the shade they cannot utilize the sun for photosynthesis.

They do not overlap so that sunlight can get to each leaf in order for photosynthesis to take place which is how they create glucose which is their food.
