This is because your hands contain oils (and, possibly, dirt) that can easily damage fragile books, even if you just washed your hands thoroughly. When it comes to leather-bound books, however, handling the books with clean, bare hands can actually be beneficial - the oil from your hands help to keep the leather soft.
