A metal handle would get almost as hot as the pot, especially if you are cooking something for an extended time. Wood and plastic does not conduct heat as well as metal, so a wooden or plastic handle protects you from the heat while you cook.

Because wood and plastic do not conduct heat as efficiently as metal does. If a pot or pan has a metal handle, the handle will get much hotter much faster than a wooden or plastic handle would.

Wood is not a good conductor of heat but metal conducts well. So a wood handle would be used so you would not burn yourself.
For decoration.

Because metal handles retain the heat and you might burn your hand.
