Seriously, it is just a convention to help keep still, minimize distraction, and express humility. Some people also pray with their hands open and raised toward heaven as a gesture of acceptance. Some people say grace at the table with hands joined as an expression of community. I have been in church services too where every person holds the hand of another all around the church.
When you pray it's your Spirit in coming into the Presence that is important, not where your hands are.
You know there is nothing in The Bible that says we should put our hands together to pray. We don't even have to close our eyes to pray either. All of that is just stereotypical of how to pray when it doesn't matter. However, I think when we do pray and end up putting our hands together it is a sign of respect.

Any hand position is good for worshiping God. Hanging by one's hands, together or apart, by a rope would be an excellent time to worship, for instance.
