∙ 8y agobecause there are no shipments on Sundays from fish mongers, the quality of the fish on mondays wouldn't be so good... In the United States, per FDA regulations, all raw fish served in restaurants must be previously flash-frozen (-20°C for a minimum of 7 days). So "fresh fish" is not the reason, since most Sushi places receive their sashimi still frozen. [source: FDA Food Code - 3-402.11 Parasite Destruction]
Closing on a Monday is more likely due to it being the least busy day for "entertainment" including eating out (which is why it's seen in other small non-Japanese restaurants). It's probably commonly seen in Asian restaurants, because they're often family-owned and want a day off for the whole family.

∙ 15y agoThe question asks us to believe that sushi restaurants are uniformly closed on Tuesday. They simply are not closed on Tuesday. At least most are not. If the prerequisite question, "Are all sushi restaurants closed on Tuesday?" we could have answered, "No." and that would have been that. A restaurant closes (or not) as decided by the owners and/or managers. Sushi restaruants do not uniformly close on Tuesday. Each one closes as determined by those who are empowered to make those decisions for that eatery.
