Scientists not only group animals and plants, they do he same with rocks, stars, and chemistry. In general this process is called Taxonomy.
The act of scientific classification is an approach to grouping similar things together - for they are also most likely to have other things in common.
Perhaps an early example of this process was in the discovery of the Periodic Table. This gave a pointer to the properties of the elements that could be expected to occupy the till-now blank spaces.
