When you eat food in a hurry, some food escapes and goes into the windpipe. Our body reaction to take the food out from there is to hiccup or choke.

because all the air builds up in your stomach and either stays trapped or comes out in hiccups

I believe its when your sucking in too much air.

But personally I only hiccup when I don't drink enough water and don't chew my food thoroughly
