Because the atmosphere on Mercury is very thin, allowing a lot of heat to be absorbed during the day. At night the atmosphere cannot hold the heat so it becomes extremely cold very quickly. Also, the lack of water and other liquids that don't change temperature easily leaves nothing to cool the rock exterior in the day or keep it warm at night.

One side of Mercury directly faces the full heat of the Sun. Mercury is very close to the Sun and has very little atmosphere to protect it. So, most of the Sun's energy reaches the surface of the planet and heats it up. The other side of Mercury faces away from the Sun and receives no heat energy from the Sun at all. Because Mercury has very little atmosphere there is nothing to hold the heat in and any residual heat energy quickly radiates out from the surface and away into space, causing the surface temperature to quickly plunge to very low levels.

Mercury's temperature is so hot during the day because the atmosphere in Mercury is very thin, allowing a lot of heat to take in during the day and so cold at night because the atmoshere at night cannot hold the heat so it becomes extremly cold quickly.

Mercury is very close to the sun. One face is permanently facing the sun (a tidal effect - same as one face of the moon always faces the earth). This face is permanently extremely hot. The back face is relatively cold. There is permanent day on one side and permanent night on the other.

Mercury has such a large tempreture variation because it is so close to the Sun, and when it is not facing it, there is no immense heat source on that side, so it is very cold.
