Fried chicken isn't supposed to be soggy. It's supposed to be crispy. who ever made soggy fried chicken didn't let it cook all the way, or you have fried chicken mixed up with some other chicken. The main reason a batch of fried chicken is soggy is that the temperature of the frying oil/grease is not kept hot enough (about 350 deg. F or 177 deg. C), thus allowing the chicken to absorb more oil/gease than desired. Even though the oil/grease might intially be at the desired temperature but if the cook crowded the pan with too many chicken pieces, the frying temperature would be lowered, creating the soggy condition in the chicken.
A sandwich becomes soggy when exposed to moisture or moist ingredients used for a sandwich filling and the sandwich is not consumed directly after being prepared. It can also become soggy from being in a sealed container.
