Because fecal matter is made up of digested and undigested food and waste particles from the body such as dead blood cells and other excreted waste from the kidneys and the liver. Fecal matter consists of 67% active bacteria and will have an odor. It should not be touched with bare hands and you should wash your hands afterwards to be sure that this unwanted bacteria doesn't make contact with your mouth.

Your fecal matter is stinky because it is what remains of digested foods and bacteria. Waste matter like food that we don't need in our body collect in the lower bowel where water is absorbed. Depending on how long it stays there and what we have eaten determines the strength of the odor. Certain foods produce stronger odors.
