When you put the sherbet on your tongue, the citric acids crystals dissolve and react with the bicarbonate of soda to form carbon dioxide gas. The bubbles of carbon dioxide are what make the sherbet fizzy.

Because all sodas are solutions of CO2 in water and flavorings.

The beverage does not bubble while the container is closed because the pressure is high. When the container is opened the pressure is reduced so the solution becomes over saturated and starts releasing gas so the solution bubbles.

ks4b: while the above answer explains the sudden burst of bubbles when you open a bottle or can, it doesn't properly explain what causes the bubbles, or fizz, to form. They actually form due to contact with imperfections/tiny bumps on the surface of whatever is containing the lemonade. the CO2 gradually builds up under these imperfections and floats up once its force of lift is great enough. This is why sometimes with fizzy drinks you can sometimes see a few bubbles just clinging to the side, because they can't get past the imperfection.

In theory, if you could somehow make a perfectly smooth container and poured a fizzy drink into it, it actually wouldn't fizz whatsoever. Don't confuse this with drinks going 'flat' though as that is due the concentration of CO2 in the liquid getting so low, that it doesn't release anymore into the atmosphere to create equilibrium.

Sherbert powder contain a carbonate (of sodium or magnesium) and an organic acid; adding water the are dissolved, the carbonate react with the acid and carbon dioxide is released (fizzing !).
