Carbonated liquids have CO2 (carbon dioxide) gas dissolved in the liquid.

When Soda bottles are sealed the pressure of the sealed bottle prevents the gas from escaping the liquid (the force of the container is higher than the energy the gas can supply thus the gas cannot escape the liquid and stays dissolved.)

When you open the bottle the pressure is released and those molecules of gas with enough energy are now able to escape the liquid and thus bubbles form in the bottle.

The same thing can be observed when you shake a bottle of soda. The shaking of the bottle provides the energy needed for the gas to escape the liquid, however until you open the bottle that gas is held in the liquid by the pressure. We all know what happens when you open a soda bottle that's been shaken up!

Soda has carbon dioxide gas dissolved in it. In the closed bottle, the soda is under pressure, and so the gas cannot escape. When you open the bottle, you release the pressure and the gas begins to escape -- you can see the bubbles rising. That is what makes the pop-fizz sound. If you leave the bottle open for a while, all the gas will escape and the soda goes flat. If you seal it back up, then the pressure builds back up inside, and keeps the gas dissolved in the soda, so it stays fizzy.

The amount of dissolved carbon dioxide in a carbonated beverage is actually more than the beverage ordinarily can hold at normal (atmospheric) pressure. The solution is supersaturated with CO2. The CO2 stays dissolved as long as the bottle is capped because of the high partial pressure of the gas. Once the bottle is opened, the pressure drops and the excess CO2 can come out of solution.

If Mentos or a similar material is added to the beverage, it provides a surface on which bubbles of CO2 can rapidly form, so that virtually all the CO2 comes out at once!

Because when you pop the lid, you suddenly lower the pressure inside the bottle and, some of gas that is in solution while under pressure comes out of solution, and bubbles up.
