The disassociation of any solute in any solvent depends on the nature of both the solute and the solvent. Ionic compounds such as common salt completely dissociates in the water as sodium and chloride ions. Polar solutes are soluble in polar solvents whereas non-polar solutes are soluble in non-polar solvents.
There are three ways in which the dissolving of a solid in a solution can be increased.
1) Use a powered form of the solid, this increases the surface area that is exposed to the solvent.
2) Heat the mixture up.
3) Agitate the mixture (stir it).

You would recrystallize a solid from a solvent pair because if only one solvent was used, then it might be hard to dissolve the solute. In a solvent pair, one solvent would probably be better at dissolving the solute.
