Why does the flight path from Aberdeen to London pass over the Lake District and Manchester rather than over York and Newcastle?

Because - planes must stick to recognised flight paths - rather than just fly where they want to. Additionally, certain parts of the UK are home to military forces. The airspace above them is a 'no-fly' zone for security reasons.
