Dogs are members of the Canine Family, which also includes Wolves. Canines are hunters, who use their teeth as a weapon. Therefore, the teeth must be kept sharp. Your dog is chewing the books because All Canines chew on things to keep their teeth sharp. If the book is bound in Leather, so much the better. If you don't want the dog doing this (and who Does), a box of Milk Bone, or similar product, made for your dog's breed should stop it, along with some gentle persuasion from you.
