It scares them. When they hear you hiccup they think of it as a sign that you are angry with them or don't want to be around them. They hear a wierd noise and they get scared. Also, dogs can sense when something is happening and they take it the wrong way. Many dogs that get hiccups also hide themselves.
Well, they'd much prefer to run and hide. But if there's nowhere for them to run they can certainly try to get a nip in.
