People do eat pigeons although they normally call them doves. Most people I know that eat them stew them up. In the cities, pigeons are scavengers and are likely to harbor diseases, so people don't eat city birds.

To elaborate on the point above, pigeon breasts are served in many restaurants. They are tender and delicious. The rest of the bird carcass, including the liver, can be stewed to make a rich accompanying sauce. You may find it offered as "squab".

I once heard that eating pigeon every day would make you ill or even kill you. Apparently this is due to the worms that live in pigeons. While an occasional meal of pigeon meat will not hurt you a constant diet is a Bad Thing. Please note this knowledge is not authoritative as I heard from a bloke I met in the pub but he was an old country boy and I'm inclined to take his word on this.
