Glider pilots gain altitude by circling over a large plowed field because a plowed area gives off heat. Heat rises so the glider takes advantage of that to gain altitude.

By circling in rising air called Thermals. This air rises because it has been warmed by contact with the sunlit ground and warm air is lighter than cold air so it is bouyant.
