They gain height by flying over large ploughed fields because the large ploughed area gives heat and the glider takes advantage of this to gain altitude
Ploughed field are dark and absorb heat from the sun this warms the air above causing convection current which glider pilot use to gain height

By circling in rising air called Thermals. This air rises because it has been warmed by contact with the sunlit ground and warm air is lighter than cold air so it is bouyant.
