Actually, there are many cheeses that are waxed. It preserves them and keeps out fungi and insects. If you've had parmesano or romano, Monterey jack, or even good aged cheddar, you've had a waxed cheese. Any cheese that is hard enough to keep it's shape can be dipped in wax to help it keep better. It works best and preserves it the longest when it's a low moisture cheese like parmesano or romano, but can be used on cheddar and colby type cheeses too. This is not the same wax that is used in candles, it's much softer and more pliable, lacking as it does the hardeners added to candle wax. It usually peels off the cheese readily.
