In colonial times, it was located approximately halfway between the only two Florida towns with significant population - Pensacola and St. Augustine.
It became the capitol because a long, long time ago two men road on horseback and they met in the middle and decided to name it the capital and the name: Tallahassee comes from an Indian tribe.

Tallahassee is the Capitol of Florida, because at the time right before Florida was granted statehood by Congress, the only part of Florida that had European settlements and residents was the Florida Panhandle (which is where Tallahassee is located in), and the actual Florida Peninsula was being disputed, threatened and fought over between the Spaniards, French and British, as part of a feud of trying to overtake the State.
Additionally, of course finally on March 4, 1845, Florida was officially granted Statehood as the "US State of Florida" by Congress at the time.
