The prairie is supposedly a good place to raise crops due to the rich, black fertile soil and flat, open land. However, prairies don't come with the amount of rainfall that is needed to grow a good crop, so water must be brought in in the form of irrigation in order to meet the moisture needs to hope to have a good bumper crop.
Prairies are relatively flat, making them easier to plow. Also, soil erosion is less of a problem.
