Because much of the knowledge in the field (no pun intended) comes from actually doing, rather than being only theoretical. People develop ways that things work for them in their particular circumstance and the ability to do this is built over time.

Modern agriculture is primarily an aggregate of many of the life sciences, though there are elements of art involved. When new approaches are needed for improvements in production, the same creative processes used in the creation of art are used in the innovation of these new approaches. Any farmer can tell you examples of situations where he/she has needed to "think outside the box" in order to solve a problem.
