Materials are usually used in jewellery because they are rare. It's the very fact that they're rare that makes people want them, and want to show them off. Gold and platinum are very rare elements on Earth. (I once heard that if you took all the gold in the world it would only fill one swimming pool).

It also helps that gold and platinum can be made to look shiny and pretty quite easily, and that they can be quite easily shaped (so you can easily make a ring or necklace from them).
