Catholic churches use incense as it is a way of denoting that which is sacred. By incensing the altar and the utensils it is being shown that these things are sacred. Incense is also used (and has been for thousands of years) to indicate a sacrifice. The incensing of the offerings (both the bread and wine to be offered and the people present) by the priest shows that they are being offered up to God. The use of incense also is a means of physical prayer. The people are using it as a sign of faith, a request for mercy and a Thanksgiving to God. Incense also helps people to enter a state of mind of prayer and faith by giving a sensible sign of mystery, sacredness and ancient dignity. The rising of the smoke also acts as a sign of our prayers being carried upward to Heaven. (cf. Revelation 8:3-5) The hazy mist is creates between the congregation and the Mass being offered on the altar is a reminder also of the ancient rites, where a curtain would be drawn in the temple to separate the area where the people would come to pray and the "holy of holies" where only the consecrated priest could go, as this was God's dwelling place.
