Firstly, water is a basic neccesity of life for all organisms.
Where there are waterfalls there will also be sourrounding vegetation and a wide range of biodiverse communities.
It would be extremely helpful for animals to be able to detect waterfalls as they would know were a constant source of water is.
Herbivores would find vegetation
Carnivores/onmivores would find prey as other animals would congregate there
Animals would find mates for breeding
These are all essencial for healthy ecosystems
