Why is it important for scientists to know substances chemical properties?

Chefs need to know physical and chemical properties in the kitchen, so they will know what will happen to different substances when they are heated, cooled, etc.

Also, they need to know so they are able to tell the difference between the properties. Physical properties can return to their natural state (water freezing to ice, then ice melting back to water). However, chemical properties cannot be changed back once they are changed (a raw egg is changed when cooked, but you cannot un-cook an egg)

Scientists can use chemical properties to identify certain substances or even separate it. One way to identify a substance is using universal indicator paper. Many scientists use flames instead.
