You you need to heat the food to a certain temperature to kill of any existing bacteria. If there is active bacteria left in the food then it will grow after you have canned and contaminate the food. You are sterilizing the product so that nothing will grow in it and cause it to go off.

when canned food -or any food for that matters- is exposed to air with out some kind of protection for extended periods of time it can come in contact with salmonella and other potentially harmful bacteria.so unless u want to get sick, empty the can and eat the food soon after u prepare it.if u open the wrong can just put plastic wrap over it and put it the refrigerator.
