In short, without exact standards of measurement, no one could speak of the same amount of a thing. For example, imagine you're trying to bake a cake. The recipe calls for 3 "bunches" of flour. Now you are totally confused because you don't know how much flour to use, because a "bunch" of flour is not an exact standard of measurement.

Or maybe you go to the bank and tell them you'd like to deposit "a lot" of money.

Hopefully you can see that both of these situations (although ridiculous) are lacking in exact standards of measurement.

This can be applied to more scientific areas. For instance, if you are recording an experiment for other scientists to also study and verify, you must use exact measurements.

If things were not measured exactly, many things would go wrong. Physics as a science requires exact measurements, as a different measurement to the real one means a different input to what it should be, and therefore a different output. This can be very dangerous if it is large scale, and the predicted outcome differs from what will actually happen.
