Oil is found underground because organic material within sedimentary rocks need to be heated by the earth's internal heat. This means the rock has to be "cooked" before oil is produced. Once the oil is produced, it is lighter than the water that will also be in porosity within the rocks. This causes oil to rise until it encounters an impermeable barrier. This is called the reservoir. Without something to hold in the oil, it would come to the surface much like it does in the La Brea tar pits and there would not be enough to sustain the worlds needs.
