Because it's edible, it tastes good when you cook it certain ways, it's full of protein AND it's super healthy. It's also a really good alternative to meat for vegetarians and vegans, although those who are not either of these eat it, too.

And if you mean 'a substitute for' silken tofu, normal tofu will usually work if the recipe is savory. But don't use regular tofu as a replacement for silken in an ice-cream/mousse dessert; in this case there is no replacement for silken tofu.
