to be more specific - Ultrasound waves travel very poorly through air....even the little bit that would be present between the probe and the skin when it is dry. The gel lets the waves transmit from the probe to the skin, and thus the tissues beneath. That is why ultrasound can be applied to many different areas of the body; except the lungs. (full of air)

The purpose of ultrasound gel is to act as a coupler. This allows the sound waves to be carried below the surface of the skin. Since the waves travel poorly through air, there must be a medium to carry the energy from the transducer head to the skin. It is important that air bubbles are not entrained in the gel as this can affect the resolution of the scan.
