There are many reasons as to why man is a model animal, both from a religious and non-religious point of view. For instance, from a Christian's point of view, man was created in God's own image, and also given a soul, therefore we are a better animal, and deemed as superior to the other animals. This is backed up from Genesis 1 in The Bible.
However, a non - religious view would be that humans are much more inquisitive, and curious than other animals, and it is this curiousity which has allowed us to explore new technologies and methods, making our race improve. This means we are the model animals.

Plants are sessile and autotrophs producing their own food, while animals are heterotrophs and mist consume plants or the other animals that eat plants.
