All living things rely on a complex set of chemical reactions to stay alive, and it is important that nothing happen to prevent these from working efficiently. If it is too hot or too cold, or too wet or too dry, these reactions will not work as well as they would otherwise, or might not work at all. That would be bad. As a result, we shiver when we get cold to produce heat and we sweat when we are hot to cool us off, and regulate the kidneys to save water when we are dehydrated; other living things have similar mechanisms.

Homeostasis is a term applied to the body maintaining many parameters (e.g. temperature, glucose etc) at a normal level. It can apply to many different systems throughout the body and there are different mechanisms for maintenance of each one (usually controlled by hormones). Homeostasis is important as it helps the body function normally, if certain levels are not kept at the correct range then it may lead to problems (e.g. Diabetes is a problem with glucose homeostasis).

Because homeostasis is being balanced and stable. If homeostasis didn't occur then we would die from organ overload. I hope that answers your question.
