There may be more than two reasons but the top two would be:

(1) To reference at a later time, perhaps when studying for a test

(2) Because for tactile learners the act of writing the notes helps them to better absorb the information. They don't retain information that they hear or see as easily as information that they learn by performing a hands on activity like writing it down.
