Eclipse is not released in November but the others are most likely because it takes around a year to make a movie and so when they finish a movie near novemeber its going to take them another year to make the next one.

The Twilight Saga movies were released in November to coincide with the time of year when the books were set, and to take advantage of the Thanksgiving holiday weekend as a popular time for movie-going. The November release date also allowed the films to avoid competition with other major blockbuster releases during the summer months.
