A rabbit go through a natural process called malting. Malting is when your sheds it's coat and is replaced with new fur. This is the only thing that i can think of that can change a rabbit's fur color.

Rabbits eyes do not change color. Under different light conditions that may look different, but the pigment remains the same.
Sounds like you have an Albino rabbit. Albino's are unable to produce a pigment called melanin and a characteristic is white fur and pink eyes.

Some white rabbits have red eyes (an albino bunny!). Most rabbits I think have brown eyes. My rabbit's eyes sometimes look red in the dark but her eyes are brown. Hope this helps:)
