The cult of St George, the patron saint of soldiers was brought to England by Crusaders returning from Palestine where he was martyred. This flag would have first been used by soldiers to recognise each other in battle. It's hard to specifically say how St George's Cross was chosen:- the symbol itself is probably ancient. In a nation of different tribes and peoples support for the Crusades would have been a rare unifying influence hence it caught on- largely in the absence of anything else. St George is legendary for slaying two Dragons to rescue a maiden. These two Dragons can be seen on London's coat of arms- which also features St George's Cross. A fitting legend for an army which may have feared the Welsh Dragon it later faced.

Well it has its origins in Medieval heraldry. Most likely it dates to the Crusades ( Saint George, Patron Saint of England also from this time ) The cross symbolises the Christianity of England ( at the time it would have symbolised the Christian crusade of England ), the red symbolises the blood of brave men i.e. those who fought in the Crusades and the white symbolises general purity. Interestingly on he Royal Navy's flag- which is the cross Of Saint George with the British Union flag in the canton ( corner ) the cross symbolises the Navy's loyalty to the monarchy.
